Генетический потенциал свиней позволяет получать среднесуточный прирост массы тела на откорме свыше 1 кг при высоких показателях качества продукции (соотношение костной ткани и мышечной, содержание белка и жира в теле). Ограниченность знаний в области регуляции синтеза и отложения в организме липидов и белков сдерживает разработку технологий, способствующих максимальному проявлению генетического потенциала мясной продуктивности свиней. Основные разделя обзора: возрастные особенности метаболизма и формирования мышечной и жировой ткани; процессы роста мышечной и жировой ткани у свиней разных генотипов; особенности жирнокислотного состава липидов у свиней разных генотипов. Возрастное торможение роста поперечно - полосатых мышц можно объяснить без привлечения гипотезы о зависящем от возраста угнетении экспрессии активных участков генома мышечных волокон. По мере увеличения общего пула миофибрилл на фоне неизменной удельной активности макромолекулярного синтеза увеличиваются суммарные потери белка в процессе внутиклеточного протеолиза, и темп отложения белка в ткани постепенно снижается до нуля к моменту достижения стадии зрелости. Молекулярные механизмы, ответственные за различия между мясными фенотипами современных пород свиней и сальными фенотипами местных пород ещё недостаточно выяснены. Жировая ткань в организме депонируется в виде висцерального, подкожного, межмышечного и внутримышечного жира с увеличением интенсивности аккреции в процессе развития; каждое депо секретирует адипоцитокины и регуляторные белки, которые влияют на ряд процессов, таких как потребление пищи, воспалительная реакция или чувствительность к инсулину. Применение межпородного скрещивания, в принципе, позволяет эффективно использовать желательные качества животных, однако эффекты скрещивания проявляются по-разному, в зависимости от генетической обусловленности признаков, их сочетаемости, условий кормления, содержания животных и других факторов. Особенности свиней разных генотипов проявляются в различии жирнокислотного и аминокислотного состава мышечной и жировой ткани, содержания витаминов и минеральных элементов, активности липогенных ферментов, в формировании депо липидов в организме, параметров качества мяса и его вкусовых качеств
