In the review, it is discussed the problem of using thermo-contrast regimes of eggs incubation, including their periodic cooling, with the aim to increase incubation’s efficiency, adaptive capacity, resistance and productivity of young birds. A beneficial effect of periodic cooling is interpreted within a theoretical framework of activating hypothalamus-pituitary-adrenal system in developing embryo. It is indicated a dependence of these positive effects upon the stage of embryogenesis, within which the training of this system has been realizing, and on the parameters of exposure (duration of exposure, temperature, rate of its decrease or increase). Ameliorating of meat productivity indices under application of periodic cooling may be determined by the increased proliferation of cells – precursors of muscle fibers. The data are reviewed on the optimal temperature regimes for incubation of eggs obtained from egg and meat crosses. The role of heat shock proteins and regulatory peptides is discussed in stimulation of muscle growth.
