ABSTRACT. The activity of proteinases of mucosa and digestive tract contents in sterlet Acipenser ruthenus (L.) and striped bass Morone saxatilis (Walbaum) in aquaculture conditions was investigated. Maximum pepsin-like proteinase activity in gastric mucosa on hemoglobin and casein was marked at pH 2. Only 2.5% of proteinase activity by hemoglobin was conserved in gastric mucosa at pH 5. Relative proteinase activity by hemoglobin in chyme at pH 5 was 42%, by casein – 39 and 28% of maximal activity respectively. Maximal proteinase activity in intestinal mucosa and chyme in sturgeon and striped bass was indicated at pH 10. Relative activity of mucosa proteinases in sterlet at pH 5 varies over a narrower range (32-57%) in comparison to chyme (10-66%) depending on the substrate and stage of digestion. In striped bass, 20% of maximum activity is maintained in the intestinal mucosa and chyme at pH 5.
