ABSTRACT. The relationship between the level of lipid peroxide oxidation products in milk and the size of milk fat globules was studied on 10 Black-and-White cows at the age of 3-4 years, in first half of lactation, within the winter-stable period. Maximal content of diene conjugates in milk was indicated at first month of lactation, a minimal one was at second month. Dispersion of fat globules was the most at first month and the least one at second month of lactation. A negative correlation was found between the milk content of diene conjugates and fraction of large fat globules (r= -0.38, Р<0.01), and between peroxide number of milk fat and mean diameter of fat globules (r = -0.83, Р<0.01). According to this research, the high intensity of lipid peroxidation in the cow's mammary gland and milk fat globules promotes increase in the milk fat dispersion.
