ABSTRACT. The aim was to study milk performance and technological properties of milk depending on the occurrence frequencies of alleles and genotypes at loci of kappa-casein gene (CSN), beta-lactoglobulin (LGB), and complex genotypes in Holsteineised Black-and-White cows, Samara type in four farms of Samara oblast. In general, the cows with genotype CSN AA had the advantage in two farms and with genotype AB and BB in one farm. On locus LGB, the advantage on 305-d milk yield had cows with genotype AA in one farm, and with genotype AB in three farms. On the content of milk protein, the advantage had cows with CSN BB genotype in two farms (3.06 and 3.15%), with genotype CSN AB − in two farms (3.07 and 3.17%), and cows with LGB BB genotype had the advantage in all four farms (3.06, 3.05, 3.16 and 3.17%). The optimal combination of taste and consistency has a cheese made from milk from cows with genotype BB CSN3. The output of the finished cheese after ripening produced from milk of cows with the BB genotype was higher as compared with the genotype AB by 5.2% and in comparison with the AA genotype by 13.6%. The data obtained will be used in efforts to improve the quality of milk and emeliorate its technological properties using genotyped sires, having in its genome the desired allelic variants in genes of the kappa-casein and beta-lactoglobulin.
