ABSTRACT. The aim was a comparative analysis of the chemical composition and nutritive value of the muscle tissue in 4- and 7-month-old rams of Edilbaevskaya breed, farmed in two climatic zones of Saratov region - forest-steppe zone of the right coast of Volga and steppe zone of the left coast of Volga. Edilbaevskaya breed is characterized by high endurance and maturity, it is well adapted to steppe climate, characterized by a large muscularity, fatness and high rate of the growth. Edilbaevskaya breed is farmed by common technology with the grazing of animals in pastures and in closed room during stall period. The meat content of essential amino acids in rams at 7 mo of age, grown in steppe area was by 7% higher compared with that from the forest-steppe zone (P<0.001). At 4 mo of age, the meat ratio of tryptophan/hydroxyproline in rams from steppe zone was higher (P<0.01), and at the age of 7 mo it was lower than in rams from forest-steppe zone (P<0.001). Protein quality indicator (tryptophan/oxyproline) varied from 2.3 to 5.3. The best balance of amino acids observed in 4 mo lambs grown on the right coast of Volga, while in 7-month age it was observed in animal grown in the left coast of Volga. Animals grown in the steppe zone have higher content of unsaturated fatty acids (by 4.5%, P<0.001) in muscle compared to the rams from the forest-steppe zone. The advantage of the ratio of polyunsaturated fatty acids have rams at the age of 7 mo in the left bank of the Saratov region. Concluded that a higher biological value of meat is characteristic for the 7 mo-old rams from the steppe zone of the Saratov region.
