The biochemical investigation of the activity of proteinases of chyme and enteric microbiota was conducted on fish obtained in summer from Kuchurgan reservoir (Moldova). In most fish species, the maximum activity of chyme proteinases has been indicated over the range of alkaline pH, in perch it was situated over the range of neutral values. The maximum activity of enteric microbiota proteinases in carp was situated within the area of acidic, in perch - at neutral, in sunfish and crucian carp – at alkaline, in pike-perch – at neutral and alkaline pH-values. It is suggested that the proteinases of enteric microbiota, regardless of the type of fish feeding, can compensate the relatively low activity of pancreatic proteases of consumers and cathepsin of their preys over the range of pH 5.5-6.5.
