ABSTRACT. The activity of proteinases and glycosidases of digestive tract in barramundi Lates calcarifer (Bloch), grown in aquaculture conditions as well as temperature characteristics of stomach proteinases were investigated. It was shown that the level of proteinase activity in barramundi stomach and intestine corresponds to that of typical ichthyophages. In hungry fish, mucosa pepsin-like activity was 6.4 folds and trypsin-like activitywas 4.5-5.4 times lower than that of feeding fish. The activity of proteases that hydrolyze proteins in different intestine parts in hungry fish was 6-9 times higher than that of glycosidases hydrolyzing carbohydrate components. The proximal-distal gradients of enzyme activities in barramundi are close to that of ichthyophages from natural waters. The temperature optimum of pepsin-like proteinase of stomach mucosa is 40ºC, Eact value is 3.02 kcal/mol within temperature interval 0-10°С and 1.53 kcal/mol within the range of 10-40°С. Within temperature range of fish feeding (0-30°С), pepsin-like activity of stomach mucosa in barramundi is equal to 38-97% of its maximal activity.
